  • 4 eggs
  • 3 tablespoons flour
  • 1 teaspoon vanilla extract
  • 2 egg yolks
  • 1/4 cup whipping cream
  • 1/4 teaspoon salt

Ingredients for the crust

  • 1/4 cup pecan nuts chopped
  • 1 teaspoon lemon zest
  • 3/4 cup flour
  • 1/4 cup sugar
  • 1 egg yolk
  • 1/2 teaspoon vanilla extract
  • 6 tablespoons butter

Directions for the Crust

  • Preheat the oven to 400 degrees F
  • Grease a 9 inch pan.
  • Take a mixing bowl and add flour, pecan nuts, lemon zest and sugar and mix.
  • Add the butter to the flour and nut mix.
  • Add egg yolk and vanilla to the flour mix and mix well.
  • Pour the mix into the greased pan and press it down.
  • Place the pan into the oven to bake at 400degrees F for 10 minutes till the crust is lightly browned.
  • Remove the pan and leave to cool.

Directions for the filling

  • Set the oven to 325 degrees F
  • Take a large baking dish and add 8-10 cusp of water and place it into the oven, keep the disk on the lower rack.
  • Take a mixing bowl and beat the cheese till smooth.
  • Add the sugar to the cheese and beat well.
  • Add the flour, salt and vanilla to the mix and beat well.
  • Add the eggs to the cheese and flour mix and mix well.
  • Pour this mix over the crust.
  • Set the cake to bake for about 1 hr 10 min at 325 degree F
  • Remove the cake from the oven and allow cooling.
  • Place the cake in the refrigerator overnight
