•             3/4 cup shortening

•             2 eggs

•             1 cup bananas(mashed)

•             1 teaspoon vanilla extract

•             2 cups cake flour

•             1 teaspoon baking powder

•             1 teaspoon baking soda

•             1/2 teaspoon salt

•             1/2 cup buttermilk

•             1/2 cup chopped pecan nuts


•             1/2 cup sugar

•             2 tablespoons flour

•             1/2 cup light cream

•             2 tablespoons butter

•             1/2 cup chopped pecans

•             1/4 teaspoon salt

•             1 teaspoon vanilla extract


•             1 egg white

•             1/4 cup shortening

•             1/4 cup butter

•             1 teaspoon vanilla extract

•             2 cups powdered white sugar

Directions for Pecan Nut & Banana Fruit Cake

  • Take a large mixing bowl and add the sugar, cream and shortening.
  • Add one egg at a time to the mix, beating the mix after each egg to get a fine consistency.
  • Add the vanilla extract and banana mash to the mix and mix well.
  • In a separate bowl, mix the flour, baking powder, baking soda and salt together.
  • Add this flour to the egg-cream mix alternating with buttermilk, and wisk well till you have a mix with a fine consistency.
  • Add the chopped nuts and mix well.
  • Take two 9 inch cake tins and grease, then pour the cake mix in evenly.
  • Sprinkle coconut on top of each cake and bake in am oven preheated to 375 F.

Directions for filling

  • Take a saucepan
  • Add sugar, flour, cream & butter
  • Cook over a medium flame till the mix is thick.
  • Add nuts, salt and vanilla and allow cooling.
  • Cool in pans 10 minutes; remove and cool completely.
  • Take the cakes out of the pans; apply the filling to the top of one of the cakes.
  • Place the other cake over the filling.

Directions for frosting:-

  • For the frosting blend egg white, shortening, butter & vanilla till you have a creamy smooth finish.
  • Add the sugar and blend well.
  • Using a spatula or knife apply frosting to the sides of the cake and allow to stand for a couple of hours.
