How to bake a Candy cane Christmas cake
- 1 tablespoon yeast
- 1/4 cup warm water
- 1/2 cup butter
- 2 eggs
- 3 tablespoons sugar
- 1/4 teaspoon salt
- 3 cups all-purpose flour
- For the filling:
- 2 (8 ounce) cream cheese
- 1/2 cup sugar
- 2 egg yolks
- 2 teaspoons vanilla extract
For the topping
- 1 tablespoon powdered white sugar
- 1 jar cherry jam
- Dissolve the yeast in warm water.
- Take a mixing bowl and combine the butter, cream, eggs , salt and sugar.
- Add the yeast to the mix and mix well.
- Add the flour and mix till you have a fine consistency.
- Put the mix into a greased pan and refrigerate overnight.
- Take the mix out of the refrigerator and make two equal halves.
- Roll the halves into rectangles(16inch x 10 inch)
- Spread the filling in the center of each rectangle.
- At each end of the rectangle now cut a 1-1/2-in.-wide strip about 3 in. into center.
- Starting at one end, fold alternating strips at an angle across filling.
- Pinch the ends to seal the roll.
- Now curve one end of the roll to create a cane.
- Cover the cane and let it rise for an hour.
- In a preheated oven bake the cake at 350F for 25 min.
- Remove the cake from the oven and let it cool.
- Now dust sugar powder over the cake.
- Mix the jam till smooth and using a spoon create stripes with the jam on the cake.
To make the filling :-
- In a mixing bowl add cheese, sugar, egg yolk and vanilla and blend well.
